Responsibilities
- Design and execute innovative seasonal menus aligned with culinary trends and guest preferences
- Lead, mentor, and develop a team of 15+ kitchen professionals through performance coaching
- Manage food inventory, cost control, and vendor relationships to maintain 28% food cost ratio
- Ensure strict adherence to HACCP protocols and sanitation standards across all kitchen operations
- Collaborate with beverage director to create complementary food and wine pairings
- Oversee kitchen budgeting, purchasing, and waste reduction initiatives
- Conduct weekly tastings and menu refinement sessions
- Represent the culinary team at industry events and media functions
Qualifications
- 10+ years progressive kitchen experience with 3+ years as Head Chef or Sous Chef in fine dining
- Formal culinary education from accredited institution or equivalent apprenticeship
- Deep knowledge of global cuisines with emphasis on seasonal, farm-to-table techniques
- Proven track record of menu development and cost control excellence
- Strong leadership skills with ability to inspire and develop diverse teams
- ServSafe certification and advanced knowledge of food safety protocols
- Portfolio demonstrating signature dishes and culinary philosophy
- Flexibility to work evenings, weekends, and holidays as needed
