Responsibilities
- Develop and execute seasonal menus that highlight Texas agricultural heritage
- Lead kitchen operations with strict adherence to HACCP protocols and sustainability practices
- Manage food costs through strategic inventory control and waste reduction initiatives
- Mentor and develop a team of 15+ culinary professionals through daily training
- Collaborate with beverage director to create complementary food-pairing experiences
- Oversee vendor relationships with local farms and artisan producers
- Ensure consistent quality across all service periods including high-volume events
Qualifications
- Minimum 7 years progressive experience in fine dining or high-volume kitchens
- Culinary degree from accredited institution or equivalent international certification
- Proven track record of menu development with seasonal/local focus
- Advanced knowledge of HACCP, cost control, and inventory management systems
- Exceptional leadership skills with ability to inspire and develop diverse teams
- Strong understanding of Texas agricultural landscape and sourcing networks
- Experience managing budgets exceeding $1M annually
- Certification in food safety management (ServSafe or equivalent)
