Responsibilities
- Develop innovative seasonal menus featuring hyper-local ingredients
- Lead kitchen staff (12+ members) through daily operations and training
- Manage food costing, inventory, and vendor relationships
- Ensure HACCP compliance and maintain 5-star sanitation standards
- Collaborate with beverage director on wine pairings and tasting menus
- Oversee special event catering for private functions
Qualifications
- 10+ years progressive culinary experience, 3+ as Head Chef
- Classical training with modern culinary techniques mastery
- Proven ability to manage high-volume kitchens ($2M+ annual revenue)
- ServSafe certification and knowledge of Illinois health codes
- Portfolio of concept development and menu engineering
- Strong leadership skills with demonstrated team development
