Responsibilities
- Oversee daily kitchen operations and production to maintain 5-star quality standards.
- Develop and mentor a brigade of 15+ sous chefs and line cooks.
- Collaborate with the Executive Chef on seasonal menu design and cost control strategies.
- Manage inventory, vendor relationships, and waste reduction protocols.
- Ensure uncompromising adherence to DOH sanitation and safety regulations.
- Monitor food cost percentages and labor budgets to ensure restaurant profitability.
- Maintain equipment performance and cleanliness in a high-volume professional kitchen.
Qualifications
- 5+ years of experience in high-volume fine dining or Michelin-starred establishments.
- Proven track record of effective team leadership and staff development.
- Deep knowledge of food costing, inventory management, and P&L accountability.
- Exceptional technical culinary skills across multiple cuisines and techniques.
- Current NYC Food Protection Certificate.
- Ability to thrive in a high-pressure, fast-paced service environment.
- Passion for farm-to-table sourcing and modern gastronomy.
