Responsibilities
- Develop seasonal menus featuring premium local ingredients and avant-garde techniques
- Lead kitchen brigade of 15+ culinary professionals during peak service periods
- Ensure HACCP compliance and maintain impeccable food safety standards
- Collaborate with beverage director on food-pairing initiatives and tasting menus
- Manage inventory controls, cost optimization, and vendor relationships
- Mentor junior chefs through structured training programs
- Conduct daily kitchen briefings and performance reviews
Qualifications
- 5+ years in fine dining kitchens with 2+ years in leadership roles
- Culinary arts degree or equivalent international certification
- Proven experience with French/Asian fusion cuisine
- Strong understanding of Singaporean food safety regulations (SFA)
- Exceptional plating skills and flavor development expertise
- Advanced inventory management and cost control proficiency
- Fluency in English with Mandarin proficiency preferred
- Ability to work high-pressure service environments
