Responsibilities
- Develop seasonal menus aligned with global culinary trends and local sourcing
- Oversee daily kitchen operations, ensuring impeccable plating and execution
- Train and mentor junior chefs in advanced techniques and food safety protocols
- Manage inventory controls, cost optimization, and supplier relationships
- Collaborate with F&B director on concept development and guest experience design
- Ensure HACCP compliance and maintain 5-star hygiene standards
- Contribute to R&D for signature dishes and tasting menus
Qualifications
- 5+ years in high-volume fine dining with 2+ years in sous chef role
- Culinary arts degree or equivalent international certification
- Expertise in Asian fusion and molecular gastronomy techniques
- Proven leadership in kitchen brigade management
- Strong understanding of Singaporean food regulations and sourcing networks
- Advanced knowledge of cost control and menu engineering
- Exceptional communication in English with Mandarin proficiency preferred
