Responsibilities
- Oversee daily kitchen operations and production workflows to ensure Michelin-standard execution.
- Collaborate with the Executive Chef on menu development, seasonal sourcing, and cost optimization.
- Train, mentor, and inspire a diverse brigade of junior chefs and kitchen staff.
- Maintain rigorous health, safety, and sanitation standards across all food preparation areas.
- Manage inventory levels, vendor relationships, and precise food cost control measures.
- Lead service during peak hours, ensuring seamless communication between front and back-of-house.
Qualifications
- Minimum of 5+ years of experience in fine-dining or high-volume upscale restaurant kitchens.
- Proven track record of leadership and team management in a fast-paced environment.
- Strong financial acumen, including P&L management, food costing, and waste reduction.
- Expertise in modern culinary techniques, food science, and menu conceptualization.
- Current NYC Food Protection Certificate.
- Ability to thrive under pressure while maintaining a composed and professional demeanor.
