Responsibilities
- Direct and oversee all culinary operations, ensuring the highest standards of food quality and artistic presentation.
- Engineer seasonal menus that leverage local sourcing, heirloom ingredients, and sustainable practices.
- Manage kitchen labor costs, food margins, and operational budgets to achieve optimal P&L performance.
- Foster a culture of excellence, professional growth, and mentorship within the culinary team.
- Maintain rigorous health, safety, and sanitation standards in compliance with HACCP and local regulations.
- Collaborate with local farmers, foragers, and purveyors to secure exclusive, high-quality seasonal ingredients.
- Oversee kitchen equipment maintenance and state-of-the-art inventory management systems.
Qualifications
- Minimum of 8-10 years of culinary leadership experience in a high-volume, fine-dining environment.
- Proven track record in Michelin-starred or James Beard-recognized establishments.
- Degree from a recognized culinary institute (CIA, Johnson & Wales, or equivalent).
- Expertise in P&L management, budget forecasting, and labor cost optimization.
- Strong knowledge of modern culinary techniques, fermentation, and global flavor profiles.
- Excellent communication and leadership skills with a hands-on, collaborative approach.
- Advanced certification in food safety (ServSafe Manager or equivalent).
