Responsibilities
- Develop and execute seasonal menus featuring locally sourced, premium ingredients
- Lead kitchen staff (15+ members) with precision and inspirational leadership
- Manage food costs, inventory, and supplier relationships
- Ensure adherence to HACCP standards and operational excellence
- Collaborate with beverage director on wine pairings and culinary events
- Maintain AAA Four Diamond service standards
- Drive kitchen innovation while honoring culinary traditions
Qualifications
- 10+ years progressive culinary experience with 3+ years as Executive Chef
- Classically trained with formal culinary education (CIA or equivalent)
- Proven track record in high-volume, fine dining establishments
- Expertise in farm-to-table sourcing and sustainable practices
- Advanced knowledge of nutrition, allergens, and dietary restrictions
- Strong financial acumen in budgeting and cost control
- ServSafe certified with current NYC Health Department permits
