You'll oversee a 20-member brigade, source premium Asian ingredients, and develop signature dishes that blend tradition with modern techniques. This role offers executive ownership of menu development, kitchen operations, and team mentorship in a world-class environment.
Responsibilities
- Design seasonal menus featuring premium Asian ingredients with contemporary presentation
- Lead kitchen brigade through daily operations and high-volume service periods
- Manage food costs through inventory control and vendor negotiations
- Implement HACCP protocols and maintain 5-star hygiene standards
- Mentor junior chefs through structured training programs
- Collaborate with F&B director on concept development and brand positioning
- Analyze customer feedback and refine menu offerings quarterly
Qualifications
- Minimum 8 years in fine dining with 3+ years as Executive Sous Chef or higher
- Advanced certification from Le Cordon Bleu or equivalent institution
- Proven track record of developing award-winning Asian fusion menus
- Expertise in cost control and inventory management systems
- Strong leadership skills with experience managing 15+ person teams
- Deep knowledge of Singaporean food regulations and sourcing networks
- Fluency in English with basic Mandarin preferred
