Responsibilities
- Develop and execute seasonal menus featuring modern interpretations of regional classics
- Lead, train, and mentor a team of 15+ culinary professionals
- Manage inventory, cost control, and supplier relationships
- Ensure adherence to HACCP and food safety standards
- Collaborate with F&B management on concept development
- Oversee kitchen operations during peak service periods
- Conduct regular staff training and performance reviews
Qualifications
- Minimum 5 years as Executive Chef in fine dining or luxury hotel
- Advanced culinary certification from accredited institution
- Deep knowledge of Southeast Asian ingredients and techniques
- Proven experience with menu engineering and cost management
- Strong leadership and team development skills
- Fluent in English with proficiency in Mandarin or Malay preferred
- Ability to work flexible hours including weekends and holidays
