Responsibilities
- Develop seasonal menus featuring locally-sourced Asian ingredients with contemporary presentation
- Lead 25+ kitchen staff through daily operations, training, and performance management
- Ensure strict adherence to HACCP protocols and food safety standards
- Manage inventory control, supplier relationships, and cost optimization (FOH budget: S$1.2M)
- Collaborate with sommeliers to design wine-pairing experiences
- Represent the restaurant at culinary festivals and media events
- Maintain 5-star hygiene ratings and sustainability certifications
Qualifications
- 10+ years progressive culinary experience with 3+ years as Head/Executive Chef
- Formal culinary degree from accredited institution or equivalent apprenticeship
- Proven track record in Michelin-starred or fine-dining establishments
- Expertise in Asian fusion cuisine and modern cooking techniques
- Strong leadership skills with ability to mentor diverse teams
- Advanced food safety certifications (e.g., HACCP, ServeSafe)
- Fluent in English with proficiency in Mandarin or Malay
