Responsibilities
- Develop and execute avant-garde seasonal menus incorporating Singaporean ingredients and techniques
- Lead kitchen operations across 3 premium venues with combined seating capacity of 200+
- Oversee R&D for proprietary culinary methods and flavor profiles
- Manage food cost optimization and sustainable sourcing initiatives
- Train and mentor brigade of 15+ culinary professionals
- Collaborate with mixologists and sommeliers for holistic sensory experiences
- Ensure HACCP compliance and maintain 5-star sanitation standards
Qualifications
- 10+ years progressive experience in Michelin-starred or fine dining environments
- Diploma/Culinary Arts degree from accredited institution
- Proven track record of menu development and cost control
- Expertise in molecular gastronomy and modernist techniques
- Strong leadership skills with brigade management experience
- Knowledgeable about Singaporean food regulations and halal/kosher practices
- Fluent in English with proficiency in Mandarin or Malay preferred
