Responsibilities
- Design and execute innovative tasting menus aligned with regional ingredients and global trends
- Lead 20+ kitchen staff across multiple venues with performance-based incentive structures
- Develop proprietary culinary techniques and signature dishes for brand differentiation
- Manage food cost optimization through strategic vendor relationships and waste reduction
- Oversee menu engineering and pricing strategies for premium dining concepts
- Collaborate with beverage directors to create integrated food-pairing experiences
- Ensure compliance with HACCP standards and sustainable sourcing protocols
Qualifications
- 10+ years progressive experience in Michelin-starred or fine-dining kitchens
- Proven track record in menu development and culinary innovation
- Advanced certification from Le Cordon Bleu or equivalent institution
- Expertise in molecular gastronomy and modernist techniques
- Strong financial acumen with P&L responsibility experience
- Fluency in English and Mandarin (additional languages preferred)
- Portfolio of 3+ successful menu launches in high-volume establishments
