Responsibilities
- Develop signature tasting menus incorporating seasonal Singaporean ingredients and molecular gastronomy
- Oversee R&D kitchen projects focused on plant-based protein innovations
- Manage culinary team of 15+ through mentorship and performance optimization
- Implement cost-control systems maintaining 35% food cost targets
- Collaborate with beverage directors on curated wine-pairing experiences
- Drive sustainability initiatives achieving zero-waste certification
Qualifications
- 10+ years progressive experience in Michelin-starred or fine dining establishments
- Diploma/Culinary Arts degree with advanced certifications (e.g., WSET)
- Proven track record in menu engineering and concept development
- Expertise in HACCP protocols and allergen management systems
- Strong financial acumen with P&L responsibility experience
