Responsibilities
- Lead culinary R&D for 3 signature restaurant concepts
- Design seasonal menus incorporating molecular gastronomy techniques
- Manage inventory costing with 15% food cost optimization
- Train and mentor 15+ culinary staff in advanced techniques
- Collaborate with Michelin inspectors for quality assurance
- Develop proprietary sauces and signature dishes
- Oversee kitchen renovations and equipment upgrades
- Coordinate with beverage director for food-pairing innovations
Qualifications
- 10+ years in fine dining with 3+ years leadership experience
- Michelin-starred restaurant background required
- Advanced certification from Le Cordon Bleu or equivalent
- Expertise in Asian fusion and molecular gastronomy
- Proven track record in menu development and costing
- ServSafe and HACCP certifications
- Fluency in English with Mandarin proficiency
- Portfolio of 5+ signature dishes for review
