Responsibilities
- Develop signature tasting menus incorporating AI-driven flavor profiling and zero-waste principles
- Lead cross-functional R&D projects for alternative protein and fermentation innovations
- Train 15+ chefs in molecular gastronomy techniques and sustainability practices
- Manage SGD 2M annual food budget with 5% waste reduction targets
- Collaborate with Michelin inspectors and international culinary ambassadors
- Oversee kitchen operations across 3 F&B concepts (rooftop, fine dining, speakeasy)
- Source ingredients from Singapore's vertical farms and regional cooperatives
Qualifications
- 10+ years in haute cuisine with 3+ years in leadership roles
- Diplôme de Cuisine from Ferrandi Paris or equivalent
- Proven experience with sous-vide, cryo-freezing, and spherification
- Advanced certification in HACCP and food safety management
- Portfolio featuring 3+ menu concepts with sustainability metrics
- Fluency in English and Mandarin (dialects a plus)
- Experience in high-volume operations (500+ covers daily)
- Portfolio of 5+ published culinary innovations in industry journals
