Responsibilities
- Develop seasonal menus featuring Singaporean fusion and regional specialties
- Lead kitchen staff (15+ members) through mentorship and performance management
- Oversee inventory control, supplier relationships, and cost optimization
- Ensure HACCP compliance and maintain 5-star sanitation standards
- Collaborate with R&D team on plant-based protein innovations
- Train junior chefs in molecular gastronomy techniques
- Manage kitchen budget with quarterly P&L responsibility
Qualifications
- 10+ years in fine dining with 5+ years in leadership roles
- Advanced culinary certification from Cordon Bleu or equivalent
- Proven track record of developing signature award-winning dishes
- Expertise in Southeast Asian ingredients and flavor profiles
- Strong understanding of food safety regulations (HACCP/FSSC 22000)
- Experience with inventory management software (e.g., Oracle Hospitality)
- Fluency in English with Mandarin proficiency preferred
