Responsibilities
- Develop and execute innovative menus across resort restaurants, bars, and banqueting services
- Manage kitchen operations, inventory control, and budget adherence
- Mentor and train culinary team members on advanced techniques and sustainability practices
- Ensure HACCP compliance and maintain highest food safety standards
- Collaborate with F&B Director on seasonal promotions and guest experience initiatives
- Source high-quality local ingredients and build supplier relationships
- Oversee menu costing and profitability analysis
Qualifications
- Minimum 5 years as Executive Chef or Head Chef in luxury resort/hotel environment
- Proven expertise in Indonesian, Asian, and international cuisine
- Culinary degree or equivalent professional certification required
- Strong leadership and team management skills with 15+ direct reports
- Advanced knowledge of food safety regulations (HACCP)
- Fluency in English; Bahasa Indonesia proficiency highly valued
- Experience with budgeting, inventory control, and cost optimization
- Creative flair with ability to design seasonal and signature dishes
