Responsibilities

  • Direct all daily F&B operations, including fine dining restaurants, artisanal tasting rooms, and high-end banquet events.
  • Collaborate with the Executive Chef and Head Sommelier to design, execute, and market seasonal, farm-to-table menus.
  • Optimize the supply chain, negotiate luxury vendor contracts, and manage sophisticated inventory control systems.
  • Lead, recruit, and mentor a high-performing service and culinary team, fostering a culture of continuous learning.
  • Monitor and analyze financial metrics, manage labor costs, and implement strategic pricing to drive profitability.
  • Ensure absolute compliance with health, safety, and food hygiene standards (HACCP) across all venues.

Qualifications

  • 7+ years of progressive F&B leadership experience in a luxury resort, Michelin-starred venue, or high-volume fine dining establishment.
  • Proven track record of managing annual F&B budgets exceeding $5M.
  • Deep culinary expertise and exceptional wine knowledge (WSET Level 3 or Certified Sommelier preferred).
  • Strong leadership capability with a hands-on approach to mentoring and staff development.
  • Bachelor’s degree in Hospitality Management, Culinary Arts, or a related field.
  • Advanced proficiency with modern POS systems, inventory software, and financial reporting tools.
