Responsibilities
- Develop and execute seasonal menus that reflect culinary innovation and market trends
- Lead, mentor, and manage kitchen staff (15+ team members) through daily operations
- Ensure strict adherence to food safety standards, inventory control, and cost management
- Collaborate with front-of-house teams to enhance guest experience and service standards
- Source high-quality, sustainable ingredients from local purveyors and farms
- Conduct regular menu tastings and training sessions for kitchen team
- Oversee kitchen sanitation, safety protocols, and compliance with health regulations
- Participate in vendor negotiations and supplier relationship management
Qualifications
- Minimum 7 years progressive experience in fine dining or Michelin-starred kitchens
- Proven track record of menu development and kitchen leadership
- Culinary degree from accredited institution or equivalent professional training
- Strong knowledge of sustainable sourcing and farm-to-table practices
- Exceptional skills in inventory management, cost control, and P&L oversight
- ServSafe certification and knowledge of NYC health department regulations
- Ability to thrive in fast-paced, high-volume environments
